This macadamia iced coffee is made with fresh coffee, macadamia milk and homemade vanilla syrup. It is dairy free and simple to make.
Iced coffee is one of the best things about summer. It’s right up there with ice cream for me. I can’t go through a day without having at least one coffee, right in the morning. During the summer it normally just gets too hot for a regular coffee, so I prefer the chilled version.
I know some people don’t really like coffee that much and only drink it for the caffeine, to get that fix and energy, but I’m not one of them. I do genuinely love the taste of coffee, so much in fact that I will try, eat or drink anything with coffee in it. It’s mainly sweets, so it’s not like I have to try hard. Tiramisu, coffee flavoured chocolate, latte flavoured ice cream, … there’s so much goodness in this world!
But my point is this – I never ever want to hide the taste of coffee when I make coffee of any kind. I want coffee to still be coffee, not coffee flavoured milk.
You can use any other milk that you like, but macadamia is really nice. It has a smooth consistency and makes a richer coffee than almond milk does, so I like this option more sometimes.
And homemade vanilla syrup is so easy to make, there’s no need to buy it.

Recipe
Macadamia iced coffee with vanilla syrup
Ingredients
- 1 cup freshly brewed coffee
- 2 cups macadamia milk
- 1 vanilla bean
- 1/2 cup granulated sugar
Instructions
- Make fresh coffee and set it aside.
- Cut the vanilla bean in half and scrape out the seeds. At the seeds and the vanilla bean to a saucepan, cover it with sugar and 1/2 cup (120 ml) water. Cook on medium heat until the sugar dissolves completely and the syrup is a golden color. Remove from heat and allow to cool.
- To make the iced coffee, fill up two glasses with ice. Divide the coffee between the two. Add 1-2 tablespoons of vanilla syrup and top with milk. Serve. Keep leftover syrup in a jar in the refrigerator.
