This light coconut lime granola is made with just seven ingredients. It is chewy but soft, seasoned with maple syrup and lime zest. Great for breakfast, to put into yogurt or smoothies.
This soft granola with lime and coconut is my newest obsession. It takes very little effort to make, but is so flavorful and unlike anything I can find in the store.
The ingredients you need are all readily available in the grocery store, including puffed quinoa. It used to be more of a rarity, but now it’s everywhere. If you can’t find puffed quinoa, then and other puffed cereal will work.
This soft granola with coconut has a delicate lime flavor, that addicting lime aroma we all love, but none of the sour taste. That is long gone by the time this is baked.
I use maple syrup to cut the lime juice and to add some sweetness. It also has a nice caramel flavor, a bit more interesting than sugar.
The texture of this soft granola is somewhere between crunchy granola and muesli. It tastes better than the latter, but isn’t as hard to chew as really clumpy granola and that was the goal.
But to add some mild crunch, I include coconut flakes, puffed quinoa and chopped pistachios. Chopped pistachios have an incredible salty and nutty flavor, but they aren’t too chewy. And puffed quinoa bakes into a nice crispy treat.
I like to add this granola to my morning yogurt or to smoothie bowls. But it’s pretty great as a snack on its own too.

Light coconut lime granola
Ingredients
- 2 cups rolled oats
- 1/2 cup puffed quinoa
- 1/2 cup unsalted shelled pistachios chopped
- 1/4 cup melted coconut oil
- 1/4 cup maple syrup
- 3 limes
- 1 cup coconut flakes
Instructions
- Preheat oven to 350°F (175°C), line a baking sheet with parchment paper and set aside.
- In a large bowl, combine oats, quinoa and pistachios. In another bowl, whisk together the oil, maple syrup, juice of one lime and zest of two limes. Pour wet ingredients over dry and stir until no dry bits are left. Spread out mixture on the baking sheet.
- Bake for 10 minutes, stir the granola and bake for another 5-10 minutes, until golden. Remove from oven, stir in coconut flakes and let cool completely. Transfer to an airtight jar and use within a week.

I just made this and had it with some pouring yogurt. It’s absolutely delicious.
