Combine cream and sugar in a medium mixing bowl. Whip on medium speed (or by hand) until firm peaks form. Set aside.
Place 2 scoops of ice cream in a glass. Pour over 1 cup of coffee (adjust amount to your preference). Top with a big dollop of whipped cream, sprinkle with cocoa or chocolate syrup, add wafers and serve.
Notes
This recipe makes 2 big iced coffees. You can easily use the ingredients listed to make 4 smaller coffees, by using 1 scoop of ice cream and 1/2 cup coffee per serving. You can use any type of coffee you like. If making freshly brewed coffee, you can chill it in the refrigerator. Or make it twice as strong and add ice cubes to it. Other types of coffee you can use:
cold brew coffee (homemade or store-bought)
espresso
instant coffee, made per the instructions and chilled with an ice cube
You can make a more creamy iced coffee that isn't as strong. Simply add a splash of cream, whole milk or creamer of choice to the glass before you add whipped cream.Adding rum is another popular choice in Europe. About 1 tablespoon of dark rum per glass is usually enough. For a more café-like cream, you can use a whipped cream dispenser.
