Ice cream iced coffee with whipped cream

Decadent iced coffee with vanilla ice cream and whipped cream. Recipe makes 2 very large coffees or 4 smaller ones (that are still quite filling)

Servings 2 -4 coffees

Ingredients 

  • 240 ml 1 cup whipping cream
  • 1 tablespoon powdered sugar
  • 500 ml 1 pint vanilla ice cream
  • 500 ml 2 cups chilled strong coffee (turkish, espresso, instant or any of your choice)
  • 2 tablespoons rum optional
For decoration:
  • sweetened cocoa powder
  • wafer sticks
  • sprinkles

Instructions

  • Pour the cream in the bowl of your electric mixer, add the sugar, and whisk the cream on medium speed until firm peaks form. Set aside.
  • Place 1-2 scoops of ice cream in a glass. Pour over up to 250ml (1 cup) of coffee (adjust amount to your preference). Top with a big dollop of whipped cream, decorate and serve immediately.

Notes

If you want to be prepared ahead of time, you can make the coffee a day ahead and chill it in the refrigerator.
You can also make the whipped cream ahead of time, if usinga whipped cream dispenser. Cream made with that is SO easy to make and use and it last in the fridge for 2 days.
FLAVOR OPTIONS
While vanilla is a classic choice, other popular ice cream flavors for this coffee are: chocolate, hazelnut, caramel, coconut.
You can also use different types of syrup to add more flavor or to sweeten the drink (although the ice cream is usually enough).
