Nectarine coconut overnight oats

A breakfast that will keep you full for hours!

Ingredients 

  • 2 nectarines pit removed, chopped
  • 2 tablespoons honey + more for serving
  • 400 ml 1 2/3 cups coconut milk
  • 150 g 1/2 cup Greek yogurt
  • 1/2 teaspoon vanilla bean paste
  • 1 tablespoon chia seeds
  • 40 g 1/2 cup toasted coconut chips
  • a small handful 1/4 cup dried raspberries, crushed
  • 100 g 1 cup rolled oats
For serving
  • thinly sliced nectarine
  • kiwi peeled and cut into a flower
  • figs
  • fresh raspberries

Instructions

  • In a small bowl combine chopped nectarines and 2 tablespoons of honey. Set aside.
  • In a medium bowl stir together coconut milk, yogurt, vanilla, chia seeds, 1/2 coconut chips, raspberries, and oats.
  • Take 2 jars and spoon in 2/3 nectarines. Top with 1/2 of coconut oat mixture. Add remaining nectarines and top with remaining oats. Sprinkle with remaining coconut chips, cover with a lid or plastic wrap and store in the fridge overnight.
  • The next day top the oats with sliced fruit and drizzle with more honey.

Notes

To cut a kiwi into a flower, I first peel it and then follow instructionsfrom this video.
