9ozEuropean quark cheeseor cottage cheese or ricotta
2tablespoonshoneyplus more to taste
7ozred seedless grapeshalved
2tablespoonsorange juiceplus more to taste
2teaspoonsorange zest
1/4cupalmondsroughly chopped
Instructions
Toast the bread in your toaster until golden brown. As the bread toasts, place quark and honey in a medium bowl. Stir until combined, taste and add more honey if needed. In another bowl, lightly toss grapes with orange juice until all the grapes are coated.
Place toasted bread on plates and spread a generous amount of quark over each one. Top with as many grapes as possible, get some of the juice too. Top with some orange zest, then almonds. Drizzle extra honey on top, if desired and serve right away.
Notes
If you can get your hands on European quark, do try it. It's a soft cheese with lots of body and a mild taste. Kind of like a cross between cottage cheese and yogurt or ricotta.If you don't like grapes, blueberries or strawberries are a great alternative. If you're not into red grapes, green are just as perfect.Store any leftover quark / cottage cheese in an airtight container in the fridge and use within 1-2 days.
