Ingredients

  • 5 apricots seed removed, quartered
  • 4 tablespoons granulated sugar
  • 5 cups filtered water
  • 2 tablespoons honey more to taste
  • 3 tablespoons dried chamomile flowers
  • 1 large lemon sliced, for serving

Instructions

  • In a medium pot combine the apricots, sugar and 1 cup of water. Cook on high heat, bring to a boil, then lower the heat to medium and cook for about 10 minutes, until the apricots are tender.
  • Add the rest of the water and bring back to a boil. Once boiling, remove the pot from heat, add the honey and dried chamomile and cover the pot. Steep for 15 minutes.
  • Strain the tea in a serving jug, transfer it to the refrigerator for a few hours until it's very cold. Serve over ice with lemon slices.

Notes

If you can't find dried chamomile, you can use chamomile tea bags instead. Use 4 for this recipe.
