Fudgy banana milkshake from Eat Like a Gilmore

Ingredients

Fudge sauce

  • 1/2 cup (120ml) evaporated milk 
  • 1/4 cup (4 tbsps | 57g) butter
  • 4 oz (115g) bakers chocolate, unsweetened
  • 1 1/3 cup (280 g) sugar
  • 1 teaspoon vanilla extract

Milkshake

  • 1/41/2 cup (60120 ml) fudge sauce 
  • 1 cup (240 ml) vanilla bean ice cream 
  • 1 medium banana, 6-7 inches (1520 cm)
  • 1/4 cup (60 ml) milk 

Serve with

  • Whipped cream
  • 1 maraschino cherry
  • chocolate bar, shaved (optional)

Instructions

  1. Make the fudge sauce: In a medium saucepan, heat milk over medium-high heat until bubbles appear around the edges. Remove from heat. Add butter and chocolate. Let stand 5 minutes, then stir until both butter and chocolate are fully melted & combined with milk.
  2. Stir in sugar and vanilla. Return to medium-high heat and bring to a low boil. Reduce heat to medium. Continue to cook for 4 minutes or until thickened. Remove from heat. Let cool.
  3. Prepare the glass: Using a spoon or food-safe brush, spread fudge sauce along the inside of the milkshake glass in a design of your choosing. Place the glass in the freezer or refrigerator for a few minutes.
  4. Blend milkshake: In blender add ice cream, banana and milk. Blend until it’s fully combined, and banana pieces have all been liquified.
  5. Assemble: Pour milkshake into chilled (fudge-filled) glass. Top with whipped cream and cherry. Sprinkle chocolate shavings around top, if using. Serve.

Notes

Bakers chocolate is also known as cooking or baking chocolate. It’s a type of dark chocolate that is perfect for cooking and baking. I am using a 70% one, so it’s pretty bitter, but it makes a wonderful, rich fudge sauce.

If your chocolate seizes during cooking, remove the pot from the heat and slowly whisk in some water. Start with 1/4 cup (60 ml) and go from there. It will help liquify the chocolate again.

If you can’t find evaporated milk, you can use condensed milk. The difference between the two is that condensed milk is sweetened, while evaporated isn’t. Adjust the sugar amount as necessary.

Keep leftover fudge sauce covered and in the refrigerator.
