Bakers chocolate is also known as cooking or baking chocolate. It’s a type of dark chocolate that is perfect for cooking and baking. I am using a 70% one, so it’s pretty bitter, but it makes a wonderful, rich fudge sauce.
If your chocolate seizes during cooking, remove the pot from the heat and slowly whisk in some water. Start with 1/4 cup (60 ml) and go from there. It will help liquify the chocolate again.
If you can’t find evaporated milk, you can use condensed milk. The difference between the two is that condensed milk is sweetened, while evaporated isn’t. Adjust the sugar amount as necessary.
Keep leftover fudge sauce covered and in the refrigerator.
