Caramelized banana quinoa spelt oatmeal

Recipe for Caramelized banana quinoa spelt oatmeal, topped with almond butter, cacao nibs, coconut and dried raspberries! It's flavorful, filling and quick to make. A great breakfast! |

A cozy and flavorful breakfast!
Serves 1 comfortably; can be divided into 2 portions.




  • 70g (1/2 cup) spelt flakes
  • 30g (1/4 cup) quinoa flakes
  • 420ml (1 3/4 cups) milk of choice (or water or a combination of both)
  • 1/4 teaspoon salt
  • 1/2 tablespoon maple syrup
  • 1/2 large banana, mashed

Caramelized bananas

  • 1 tablespoon coconut oil
  • 1 tablespoon maple syrup
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla bean paste
  • 1/2 large banana, sliced

Toppings (optional)

  • almond butter
  • shredded coconut
  • coconut chips
  • cacao (cocoa) nibs
  • freeze-dried raspberries


  1. First cook the oatmeal:
    Combine spelt and quinoa flakes, milk, salt, maple syrup and 1/2 banana in a small saucepan. Cook over medium heat, stirring occasionally, for about 15 minutes or until the flakes are tender and the oatmeal creamy. (The longer you cook after that, the thicker it’ll get). Remove from heat and transfer to a bowl.
  2. Make the bananas:
    Heat oil in a small pan set over medium heat. Stir in maple syrup, cinnamon and vanilla paste. Once the mixture starts to bubble, add bananas and simmer them on each side for about 2 minutes, or until they’re soft and golden. Remove from heat.
  3. Add bananas to the bowl of oatmeal, then top with desired toppings and… eat and enjoy!


If you can’t find spelt and/or quinoa flakes, classic rolled oats work just as well.
