Honey apricot chamomile iced tea

Iced tea is the best homemade summer drink you could ever make. This apricot chamomile iced tea with honey is flavourful and very lightly sweet, as I use honey and little sugar.

Keeping well hydrated during hot days can seem like such a task sometimes, so I love to make different homemade drinks. And chamomile iced tea with apricots is an absolute favorite.

This easy recipe comes together in no time. Unlike sweet tea, I make my iced tea with little sugar and some honey. It’s sweet enough and flavorful, but it’s not sickly sweet. I find that adding too much sugar isn’t as thirst quenching as I like, so keeping it to a minimum and focusing on other flavors is the way to go.

This apricot iced tea is made by cooking apricots with water and sugar until they’re tender. The sugar brings out the sweet flavor of apricots and cooks into a syrup with the water.

This concoction is then infused with honey and dried chamomile, that also give it a nice golden yellow color. Combined, you get a mix of fruity and floral flavors, like a piece of summer candy.

As a cherry on top, I like to add some lemon. It complements all the flavors and cuts the sweeteness by giving it something fresh. Served over a glass of ice, you can’t miss with this apricot chamomile iced tea with lemon and honey. It’s great for summer entertaining too.

Honey apricot chamomile iced tea

A wonderful iced chamomile tea, infused with honey and apricots. Not too sweet, very drinkable and great for summer.
Prep Time: 5 minutes
Cook Time: 15 minutes
Total: 20 minutes
Servings: 5

Ingredients

  • 5 apricots, seed removed, quartered
  • 4 tablespoons granulated sugar
  • 5 cups (1200 ml) filtered water
  • 2 tablespoons honey, more to taste
  • 3 tablespoons dried chamomile flowers
  • 1 large lemon, sliced, for serving

Instructions

  • In a medium pot combine the apricots, sugar and 1 cup of water. Cook on high heat, bring to a boil, then lower the heat to medium and cook for about 10 minutes, until the apricots are tender.
  • Add the rest of the water and bring back to a boil. Once boiling, remove the pot from heat, add the honey and dried chamomile and cover the pot. Steep for 15 minutes.
  • Strain the tea in a serving jug, transfer it to the refrigerator for a few hours until it's very cold. Serve over ice with lemon slices.

Notes

If you can’t find dried chamomile, you can use chamomile tea bags instead. Use 4 for this recipe.
