The trick in making the creamiest creamed spinach is using sour cream. This is my favorite version and a dinner staple, it’s creamy and the perfect side dish for mashed potatoes.
Creamed spinach with a hard boiled egg is the biggest comfort food for me. With the mandatory side of mashed potatoes. My mom made this often growing up, with an addition of roasted chicken, and I could never get tired of it.
Many traditional recipes use heavy cream in creamed spinach, but I find that too sweet. Instead I prefer to make creamed spinach with sour cream. It’s tangy and complements the green spinach perfectly. To thin it out, I like milk, because it’s less sweet than cream.
The seasonings are simple, just sea salt, black pepper and garlic powder. You can use fresh garlic if you wish, but I like to use garlic powder in this particular recipe. It’s friendlier for a picky palate and while I’ve grown out of it, I still like a nostalgic meal.

Creamiest creamed spinach
Ingredients
- 2 1/2 tablespoons sunflower oil
- 2 tablespoons all-purpose flour
- 2/3 cup (160 g) sour cream
- 1/2 cup (120 ml) milk
- 16 oz (450 g) frozen spinach, thawed and drained
- 1 large egg, whisked
- 1/2 teaspoon garlic powder, more to taste
- 1 teaspoon fine sea salt, more to taste
- 1/4 teaspoon freshly ground black pepper
Instructions
- In a skillet, heat oil over medium heat. Add the flour and whisk fast (to prevent flour form burning) to make a roux. Whisk in sour cream and milk.
- Add the spinach, egg, garlic powder, salt and pepper. Keep whisking until incorporated and cook on for about 10 minutes, maintaining a simmer throughout.
- Taste and add more seasoning if needed. Serve warm.
We have a family recipe for creamed spinach as well (we make it around Christmas usually) but it doesn’t involve sour cream- I’m intrigued! I’ll bet it’s a wonderful addition!
I think creamed spinach is such a family classic, we really all have our own recipes. But I also think sour cream makes all the difference and you should totally try it if you can. 🙂
